A morning recipe

One of my favourite morning treats to make for my wife is the onion, bacon, beemster and lime omelette:

Start with some shallots (any kind of onion will do, but I like shallots). Slice them finely, and saute them lightly until they become soft and translucent. Put them aside for later.

Cook several strips of bacon over low-medium heat until crisp. Break into bits. Put aside until later.

Grate some beemster cheese (any firm, sharp cheese will do, but I like beemster).

Zest one small lime.

Cook the omelette using the onion, bacon (bits), beemster and lime (zest) as filling.

Serve with cinnamon and nutmeg spiced coffee for breakfast Christmas morning.

Oh, yum!  Santa do you make house calls?  lol   Hope you and yours have a Merry Christmas!  -  Barbara said...

Never ever thought of using lime in an omelette.  But, one of my favorites is shallots, mushrooms, bacon and smoked Gouda (and if I've got some Hollandaise lying around, bonus!).

As for the coffee: black.  Strong and black, and no foo-foo flavorings.

How many times do I have to squeeze a lime to make it "zest"?
Or do I need to buy a "zester"?!?
Why can't we stay with terms which don't  require looking up in a cookbook?

Extra hollandaise sounds great! You have extra lying around?? ;)

I'm with Dan. Please leave my coffee be! Put you your flavours on your ice cream.

I like cinnamon or hazelnut coffee...but not the fake add ins...  the kind where it is processed with the bean already... yum... Hollandaise.  Makes every egg better.... yum...

be well,

Yes.  I like Hollandaise so much that, if I didn't have the little common sense that I do, I'd probably make a big batch, pour it into a mug, and drink it through a straw as though it were a shake.

Yes.  I'm a sick man...

Mmmmm...sounds good. I've put cinnamon in with the coffee grounds before, but not nutmeg. I think I'll do that tomorrow morning. Lime is good in anything! (especially rum)
Happy Holidays,

All the way over from my place I detected a delightful aroma of something cooking, found the trail lead straight back here to you.  I'll be trying this tomorrow a.m., thanks Paul and sorry I've been a stranger lately.  CATHY

Hmm... I enjoy cooking and trying new things. Have never seen beemster cheese at the grocers, but haven't exerted much effort in the attempt. Never tried lime in an omlette, lemons yes and tomatoes, broccoli, etc. May give it a shot.
